- 8 oz cream cheese, softened
- ¼ cup granulated sugar (for cheesecake filling)
- ¼ cup granulated sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in buttermilk and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt; gradually mix into wet ingredients until just combined.
- Divide batter among cupcake liners, filling each about halfway.
- In another bowl, blend softened cream cheese with sugar until smooth; add egg and flour, mixing until combined.
- Spoon the cream cheese mixture over each cupcake batter almost to the top.
- Bake for approximately 25-30 minutes or until a toothpick inserted comes out clean.
- Cool in the tin for 10 minutes before transferring to a wire rack.
- Once cool, sprinkle sugar on top of each cupcake and caramelize using a kitchen torch or under a broiler.
