Ingredients
- 7 to 8 cups seedless watermelon, cut into ¾ inch cubes
- 1 ½ cups fresh blueberries
- 1 cup crumbled feta cheese
- Fresh mint and basil leaves, thinly sliced
- Juice of 1 ½ limes
- 1 tablespoon extra virgin olive oil
- 1 to 2 tablespoons honey
- A pinch of salt
Instructions
- In a mason jar, combine lime juice, olive oil, honey, and salt. Shake well to create the dressing.
- In a large bowl, gently mix cubed watermelon, blueberries, sliced mint and basil, and crumbled feta.
- Drizzle the dressing over the salad and toss lightly to combine.
- Garnish with remaining feta and additional herbs before serving immediately.
