- 3 cups strawberries (chilled, tops cut off)
- 3 cups watermelon (chilled, seedless if possible, cubed)
- 2 tablespoons olive oil
- Juice of 1 whole fresh lime
- 1 ½ teaspoons honey (or maple syrup)
- 2 tablespoons fresh mint (chiffonade or chopped fine)
Instructions
- In a small bowl or mason jar, combine the olive oil, lime juice, and honey; shake or whisk until well blended.
- Slice strawberries into quarters and cube the chilled watermelon.
- In a large serving bowl, gently mix the strawberries and watermelon.
- Stir in chopped mint and drizzle with honey lime dressing.
- Season with crushed sea salt flakes and black pepper to taste. Serve immediately for optimal freshness.
