Ingredients
- 1 large sweet potato (about 12 ounces), diced into 1" pieces
- 1 lb flat iron steak, diced into 1" pieces
- 3 tbsp olive oil (divided)
- 2 cloves garlic, minced
- 2 bell peppers, diced into 1" pieces
- 4 green onions, thinly sliced
- 2 tbsp coconut aminos
- Salt and cracked black pepper to taste
- Fresh cilantro for garnish
Instructions
- Microwave the diced sweet potatoes with salt for about 4-6 minutes until barely tender.
- Heat 2 tablespoons of olive oil in a skillet over high heat; add steak and cook for about 10 minutes until browned.
- In the same skillet, add another tablespoon of olive oil and sauté the microwaved sweet potatoes until browned (3-4 minutes).
- Add minced garlic; cook till fragrant (about 1 minute).
- Stir in bell peppers and green onions; sauté until tender but crisp (3-4 minutes).
- Return steak to the skillet with coconut aminos; toss everything together for an additional minute.
- Season with cracked black pepper and fresh cilantro before serving.
